Blue Nile Cafe' opened its door in July of 1995. Since then, it has served the best traditional Ethiopian cuisine in Kansas City. The food is composed of lamb, beef, chicken and a variety of vegetarian and vegan dishes, served with Enjera (spongy flat bread made from teff). The food is cooked fresh daily, with all natural ingredients. The Blue Nile was chosen by AOL members as the third best vegetarian restaurant in Kansas City and voted "Best Ethiopian Food" by Vegetarian Kansas City (Veg KC) in 2005. The Blue Nile has also been reviewed by The Kansas City Star and other numerous publications.
