Companion, St. Louis: Longstanding lunch favorite Companion has two café locations in the St. Louis area that feature the bakery's fresh bread, sandwiches, salads and four daily rotating soups, including chicken-artichoke-Brie, butternut squash and cabbage, and favorite New England clam chowder. 314.352.4770.

The Fountain on Locust, St. Louis: Aside from boozy ice cream martinis and award-winning restrooms, the St. Louis soda fountain has a roster of nearly 50 rotating soup recipes, all made from scratch each morning. Speak Sandwiches, Kansas City: Restaurateurs Todd Schulte and Tracy Zinn opened Speak Sandwiches in October 2016 inside Uncommon Stock, their from-scratch soup, stock and bone-broth company in Kansas City. In addition to classic deli sandwiches, Speak sells soups like matzo ball, tomato-pepper and beef barley. 816.888.9474.

The Fork and Spoon, Springfield: Pass up options that require a fork (deconstructed cobb salad or Cajun succotash skillet, for example) for those needing a spoon: As the name implies, this Springfield, Missouri, lunch café serves a tasty mushroom-sage soup, plus daily offerings like chili con carne, lobster bisque, chicken tortilla, Tuscan tortellini and loaded potato. 417.761.4838.

Casper's, Springfield: This greasy spoon in Springfield, Missouri, dates back to 1909, as does its signature chili that founder Casper Lederer originally sold from his fruit stand.
