Broccoli and Crab Bisque

Ingredients:
- 1 cup sliced leeks
- 1 cup sliced fresh mushrooms
- 1 cup fresh or frozen (thawed and drained) chopped broccoli
- 1 clove garlic, minced
- ¼ cup butter
- ¼ cup all-purpose flour
- ¼ teaspoon dried thyme (if fresh, use desired amount)
- 1/8 pepper
- 1 small bay leaf
- 3 cups chicken broth
- 1 cup light cream
- ¾ cup shredded Swiss Cheese
- 1 6-ounce package frozen crabmeat, thawed and drained
Instructions:
Cook leeks, mushrooms, broccoli and garlic in butter till crisp-tender. Blend in flour, thyme, salt, pepper and bay leaf. Add chicken broth and cream. Cook and stir till thick and bubbly. Cook and stir 1 more minute, add cheese. Stir till melted. Add crabmeat and heat.

Chicken, Escarole and Tortellini Soup

Frondizi’s Ristorante, Kansas City
Ingredients:
- 1 (3-pound) chicken
- 1 bay leaf
- 2 large onions, diced
- 5 stalks celery, diced
- 1 head of escarole, separated into leaves and blanched
- 1 bag frozen tortellini, cooked and drained
- freshly grated parmesan cheese or extra virgin olive oil for garnish (optional)
Instructions:
In a large stockpot cover the chicken with water and boil with the bay leaf for 1 hour or until tender and easily pulled from the bone. Remove chicken from the broth. Add the onions, celery and carrots to the broth and simmer until tender. Pull chicken meat from the bones, chop and put back into the soup. Simmer 5 minutes. Place 1 or 2 escarole leaves and 5 or 6 tortellini in each serving bowl. Ladle hot soup into bowls. Garnish with grated parmesan cheese or olive oil if desired. Serves: 8

Chili Con Todo

Warrensburg
Ingredients:
- 2 pounds lean ground meat
- 10-12 fresh roasted green chilis or 6 cans chopped green chili
- 1 can whole kernel corn
- ½ teaspoon cracked pepper
- 3-4 cups V-8 juice
- 1 tablespoon beef granules
- 1 can original Rotel
- ½ teaspoon garlic powder
Instructions:
Cook ground meat (option with onion) until meat is no longer pink, add green chili, garlic powder, corn, Rotel, pepper, and V-8 juice. Add beef granules, stir to blend, simmer 30 minutes. Serve with pinto beans and warm tortillas. Butter tortillas, top with a little honey, roll up to serve. Beef granules are salty, so taste for salt before adding more. Serves: 6-8

Corn Bread Salad

Ingredients:
- Make a skillet of corn bread—after baking crumble into a bowl (not powdery)
- Then add:
- 8 pieces of crumble crisp fried bacon
- 1 chopped pepper
- 1 diced onion
- 1 cup mayonnaise or salad dressing
Instructions:
Add dressing carefully; you don’t want this soggy and may not need a full cup. Also you can use ranch dressing in place of mayonnaise. Serves: 6

Famous Chicken Salad

Ingredients:
- 3 cups chicken, cooked and diced
- 1 ½ cups celery
- 2/3 cup broken pecans (better if toasted)
- 1 cup chopped green stuffed olives
- 1 cup mayonnaise
- 1 tablespoon spicy mustard
Instructions:
Cook chicken (roasting preferred) and dice when cool. Chop celery, break up pecans, chop olives, mix all together. Dress with mayo and mustard, stir (if the chicken is dry use sweet pickle juice--Elizabeth Irle’s secret recipe is best!--improves the salad). Serve as a sandwich, in a tomato shell or wrapped in lettuce. Mince finer if served with crackers. Serves: 6 Date of Recipe: 1970

Ingredients:
- 2 tablespoons fat
- 2 pounds ground beef
- 1 large onion chopped fine
- salt to taste
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon coriander
- 1 #2 can tomato juice
- 1 or 2 hot red peppers
- 1 chili pepper
- 1 teaspoon Mexican sage
- ½ teaspoon garlic power
- Red beans
Instructions:
Lightly brown the ground beef, oinion, with salt, in the fat. Mix remaining ingredients well and add to the browned beef. Simmer for about 40 minutes. Cook beans separate. (Hart’s Café served the beans in the bottom of the bowl with the chili on top.) Serves: 6-8 Date of Recipe: 1920

Grilled Shrimp Salad with Chardonel Vinaigrette

Stone Hill Winery
Ingredients:
- 2 ounces pine nuts
- 2 ounces freshly grated Parmesan
- 12 shrimp, at a weight of 13-15 shrimp per pound, peeled, de-veined and butterflied 1/2”
- Grill seasoning or seasoning salt
- 12 ounces baby greens
- Red pepper slices
Instructions:
Grilled Shrimp Salad Lightly toast pine nuts in 350° F oven and set aside to cool. Lightly dust shrimp in grill seasoning or seasoning salt and grill or broil for 2 minutes on each side. Cool in ice. Arrange baby greens on plate and center shrimp. Sprinkle with Parmesan and pine nuts and garnish with sliced red peppers. Chardonel Vinaigrette 1-1/2 tablespoon white wine vinegar 6 tablespoon Chardonel 1 shallot, minced 1 clove garlic, minced 1 teaspoon fresh rosemary 8 tablespoon olive oil 1 teaspoon Dijon mustard 1 teaspoon salt Fresh ground pepper to taste Finely mince shallot, garlic and rosemary. Add to Chardonel and simmer until reduced to two tablespoons. Cool. Add white wine vinegar, mustard and salt and slowly whisk in olive oil until it is emulsified. Add fresh ground black pepper to taste.

As a result of their vision and determination, Hermann has maintained its German culture and historical buildings. Vintage Restaurant Chef Tim Dempsey created this wonderful salad and Chardonel vinaigrette recipe for one of Stone Hill Winery’s special dinners.
Hot Chicken Salad

Ingredients:
- 2 cups cooked diced chicken
- 1 cup saltine cracker crumbs
- 2 cups chopped celery
- ¼ cup chopped onion
- ½ teaspoon accent (optional)
- 1 cup broken almonds (a must)
- 1 cup mayonnaise
- 1 can cream of mushroom or chicken soup
- 1 tablespoon lemon juice
- 1 teaspoon black pepper
Instructions:
Combine ingredients and pour into a 3-quart casserole. Bake at 350 degrees until bubbly and slightly brown on top.

Lobster Bisque

Savoy Grill, Kansas City
Ingredients:
- Meat from 3 pounds of boiled live lobster, chopped; shells, body, tomalley and 1 cup
- 2 tablespoons olive oil
- 1 medium onion, chopped
- ½ celery stalk, chopped
- 1 carrot, chopped
- 1 tomato, chopped
- 1 head garlic, halved crosswise
- 2 tablespoons chopped, fresh tarragon leaves
- 2 tablespoons chopped, fresh thyme leaves
- 1 bay leaf
- ½ cup brandy
- ½ cup sherry
- 4 cups fish stock
- ¼ cup tomato paste
- 1 ½ cups heavy cream
- 1 ½ tablespoons cornstarch
- 3 tablespoons water
Instructions:
In a 6-quart heavy kettle heat olive oil over medium high heat until hot but not smoking. Sauté lobster shells and body, stirring occasionally, 8 minutes. Add onion, celery, carrot, tomato, garlic, tarragon, thyme, bay leaf, brandy and sherry and simmer, stirring, until almost all liquid is evaporated, about 5 minutes. Add fish stock, reserved tomalley and the reserved cooking liquid. Simmer mixture, uncovered, stirring occasionally for 1 hour. Pour mixture through a fine sieve into a large saucepan, pressing on the solids until all liquid is through, then discarding the solids. Whisk in tomato paste and simmer until reduced to 3 cups, about 10 minutes. Add cream and simmer 5 minutes. In a small bowl stir together cornstarch and water and whisk into the bisque. Simmer, stirring, 2 minutes. Bisque will thicken slightly. Add lobster meat with any reserved juices and simmer 1 minute or until lobster meat is warm. Serves: 6-8

Momma Nita’s Tator Salad

Ingredients:
- 1 lb. Red potatoes
- some cold real butter
- 2 large country eggs
- ½ cup chopped white onion
- ¾ cup Kraft Miracle Whip
- 1 teaspoon French’s Mustard (original yellow 1940)
- 1 tablespoon sweet pickle relish (homemade or highest quality that can be bought)
Instructions:
Boil eggs the night beofe and refrigerate (eggs are easily peeled if cracked in cold water while they are hot). Wash potatoes, do not peel, place in pan cover with cold water, bring to boil on medium heat, cook until tender, drain water and peel as quickly as possible. Lightly glaze peeled, whole potatoes with butter, let cool. Cut potatoes into ½ inch cubes, cut eggs into quarters, then thirds. Add to potatoes, salt and pepper, add onion, mix lightly with fork. Mix Miracle Whip, mustard, and relish together, then add to potatoes and blend, refrigerate several hours. Serves: 4-6 Date of Recipe: 1950

Pecan Chicken Salad

Ingredients:
- 1 pound diced cooked chicken
- 1 tablespoon finely diced red peppers
- 1 cup finely diced fresh celery
- 1 cup chopped pieces pecans
- 6 separated egg yolks
- 3 cups 100% salad oil
- 2/3 cup real lemon juice
- 1 grated zest lemon
- 2 teaspoon granulated garlic
- 1/4 cup red wine vinegar
- 3 cups brown sugar
- salt & pepper
- 1 tablespoon Dijon mustard
Instructions:
Combine egg yolks and mustard. Whisk in half of the salad oil in a thin stream, whipping constantly...then set aside. In another bowl, add lemon juice, lemon zest, garlic, half of the vinegar, salt & pepper, and brown sugar. Mix evenly. Add remaining oil & vinegar. Mix evenly. Combine with egg/oil emulsion. Mix diced chicken, pecan pieces, chopped celery, red bell peppers, and lemon chantilly dressing. Cut half of pineapple into boat and add pineapple chunks to mixed fruit around pineapple boat on plate. Fill pineapple with chicken mix.

- 1 cup sugar
- ½ cup vinegar
- 1 cup celery, cut up
- 1 cup onion, chopped
- 1 cup green pepper, diced
- 1 jar pimento, drained and diced
- 1 large can sauerkraut, drained
Instructions:
Boil sugar and vinegar until syrupy, then cool. Combine all ingredients and mix well. Let set overnight in refrigerator before serving. Serves: 6-8 Date of Recipe: 1980

So Easy Split Pea Soup

Ingredients:
- 1 pound dry split peas, rinsed and drained
- 1 small white onion, diced
- 2 teaspoons salt
- ½ teaspoon pepper
- 2 quarts water
- 1 Ham hock (optional)
Instructions:
Cook together until peas are tender and ham is done. It will be thicker and mushy the longer it cooks.

White Chicken Chili

Ingredients:
- 2 pounds white beans, soaked overnight and drained
- 10 cups chicken broth
- 3 cloves garlic minced
- 2 onions, chopped
- 3 small cans chopped green chilies (4.5 oz.)
- 2 tablespoons ground cumin
- 2 teaspoons dried oregano
- ½ teaspoon ground cloves
- ½ teaspoon cayenne pepper
- 8 cups diced cooked chicken
- 6 cups grated monterey jack cheese
Instructions:
Combine beans, chicken broth, garlic and onions in a large soup pot, and bring to a boil. Reduce heat and simmer for three hours. Add remaining ingredients, except cheese, and simmer for 1 more hour. Garnish each bowl with cheese and serve with crackers or tortilla chips. A dollop of sour cream in the bowl is delicious too! Serves: makes 6 qts. Date of Recipe: 1980
